A cozy dinner....

It was freezing yesterday, so I decided to make a homey/cozy dinner. As you can see I made chicken fingers....and I have to say, they absolutely melted in your mouth! I got the recipe from a cooking show on Food Network. I'm not a huge chicken finger fan....but these were so good....everyone loved them. I made mashed potatoes and decided to put sauteed onions and cheese in them....yum....and of course, I baked an apple pie as well. I have to say, the house smelled wonderful!

It's still freezing today....my hands are cold. I have sewing to do, so soon my fingers will be toasty warm from my rapid fire stitchery....lol. Apparently I missed a UPS delivery yesterday. I didn't realize until I opened the front door when the doorbell rang in the evening. The little sticker was on my door saying that they had missed me and would return today between 10:30 and 2:00. There goes my shopping! It is my free printer that didn't get sent out with my new computer. I'm giving it to Betsy so that she can print out homework in her room. Man, am I a nice mother or what!? Of course, maybe I should give the printer to wee one, as Betsy informed me that her room isn't as "cozy" as before, now that she has the new desk and computer and that "I don't really need a computer in my room....can you take it out?" WHAT? I bought her a huge new desk, fixed the computer so that she could even be online in her room....and she doesn't want it because it isn't cozy anymore? Wow. Although I should be irritated because of all the work we did....I'm kinda impressed. I mean, she prefers ambiance over technology....

Wee one is so excited because tomorrow is the day....the day she gets her first massage! LOL....she is acutally counting the hours down. My aunt got her a one hour massage for Christmas, and they have the afternoon all planned. She will pick her up after school, then take her to the spa (she will be in the room while she gets her massage), then they are meeting my uncle and going out to dinner....someplace that serves spaghetti! I tell ya, I don't remember service like that as a kid! LOL....

Thursday afternoon we are outta here for the weekend....off to NC to hopefully see some snow, if only on the mountain tops. I keep checking the forecast to see if any snow is expected but, alas, there is none. Dang it. The girls were hoping for a blizzard on Sunday so we get snowed in....lol.

I do believe I've been rather excessive with my use of "lol" today. I wrote a few e-mails and thought I was laughing a bit too much. Hmmmm, I don't feel giddy.

Anyhoo, I've got to get going here. BTW, because of all the homework and after dinner "stuff", no one ate any of the pie. It's just sitting there on the counter. All delicious looking. Taunting. Tempting. Calling my name. I must resist....

wow that dinner, you are my hero! I just made my chicken cutlets the other day and I cut them into pieces like you do...and I made mashed pot too...when I make that dinner it's always a big hit. I also have another way of making my cutlets that my aunt taught me...in her egg wash she adds a bit of syrup to it...it gives the cutlets a nice hint of sweetness...not too much but just enough. I do not always make them that way but its just another variation to them.

YUM!  I've felt quite like Mary Homemaker, myself, lately.  I've been making some killer banana bread and today I made homemade pancakes in the blender (with a little sprinkle of chocolate chips to boot!)  All thanks to Allrecipes.com, of course, and now that I'm down to part time at work, I feel like doing all kinds of fun things!

Hope your wee one has a great massage!

That pie is gorgeous!!  This is so funny but I wish you could see the UGLY UGLY UGLY ugly pumpkin pies I made this weekend.  It was a disaster!  First, the crust wasn't home made, it was the kind you buy to save time.  I followed the directions, or so I thought.

Must not have cuz the crust SHRUNK!  So I didn't have anymore crust made so I had to go with it.  So then the filling had to be cut back to fit into my shrunken crusts.  So then I burned one of them... it was just not a good pie day.  They tasted awful and weren't at all what pumpkin pie should be.  Crust was like sheet metal or something.  You could pick them up out of the pans.  LOL!  Hint hint:  You can post the recipe on those absolutely yummy, delectable looking chicken fingers if ya wanna- I can see that they look just as delicious as that pie!!  Oh and the apple pie for that matter.  Oh and yummy idea-- cheese n onions make everything taste so good!!

Oh, MY!  I am impressed, a) by that wonderful meal.  I love making meals like that! and, b) by your daughter as well.  I dig that she shose, "the ambience over technology!"  Girl after my own heart, or maybe her Mother's!?! hehe.  Anyway, baby steps with that pie.  Which WW plan are you doing???  Apples are probably core, but if I guess, that homemade crust of yours sure isn't!  Best to ya, Cya, Kris

Sherry, I'll help with the pie.....after all, you don't need the temptation just sitting around tempting you hehehe Not that a slice would hurt you any. Have fun this weekend and hope you do get some snow. Hugs Lanny

Wow, your dinners would do Martha Stewart proud!  Wonder if she can get internet access in prison so she can come to your journal and be jealous?  LOL!  You can have our snow by the way, we have a snow day today because of it.  Just drive about 24 hours and you will see the snow.  :)  And, Betsy doesn't want a computer in her room?!  I never thought I'd see the day that a teenager asks you to take a computer OUT of their room!  You are asking for trouble letting Wee One get a massage ya' know?  She will want one now at least once per month.  You can have a Mommy/Daughter monthly trip to the massage place though.  That sounds nice!  :)
Hugs and love, Lisa
